Whiskey of the Valley
Born on the banks of the 8 mile creek at mangalore, victoria. Our rye is purposefully grown by the Griffith family. It is then taken a short distance to the distillery in Shepparton for processing. The barrels for this whiskey come from the Tahbilk winery in nagambie and from Tallis wines at Dookie.  Truly this is a whiskey of the valley. The goal with this spirit is to extract every ounce of flavor from the grain and barrel, not by quantity and speed, but by care, craft and time. After all really great whiskey isnt made in minutes, but it is made of careful moments. By fermenting and distilling on the grain and using a direct steam injected still, an amazing bouquay of esters and flavor congeners are brought into being.  Coupled with in-house refinished, long toast, heavy charred red wine barrels, and time, it creates a truly one of a kind whiskey.
